Turkish Adana Kebab

Ingredients

  •  Minced mutton meat 1 Kg (700gm meat & 300gm fat)
  • Red Capsicum ( 1 medium sized)
  • Garlic (5-6 cloves)
  • Onion (2 Large)
  • Coriander or Parsley (1/2 Cup)
  • Black Pepper
  • Sumac Spice (Substitute: Pomegranate seeds powder 1 tsp + lemon juice 1 tsp + 1/8 tsp lemon zest)
  • Coriander powder
  • Red chilli powder
  • Paprika
  • Tomato
  • Vegetable oil

Method of Preparation

  1. Take meat chopper and add mined mutton to it
  2. Add one red capsicum medium sized (chopped)
  3. Add 5-6 garlic cloves, 1 large onion cut into suitable pieces, coriander or parsley 1/2 cup, black pepper 1 tsp, sumac 1 tsp, coriander powder 1/2 tsp, red chilli powder 2 tsp, paprika 1 tsp
  4. Chop all ingredients together until finely minced
  5. Refrigerate the mix for 30 mins
  6. For salad, take one large onion and slice it in long pieces, and take one tomato and chop it in small cubical pieces
  7. Add some coriander or parsley, lemon juice 2 tsp, black pepper 1/4 tsp and salt as per desired taste
  8. Mix all ingredients well and set aside
  9. Take out the minced mutton and knead it into 8-10 small meat balls
  10. Wet your hand with water and take a flat skewer
  11. Now start pressing the meat ball against the skewer to make it stick around the skewer
  12. Elongate the meat around the skewer up to 8-10 inches length bey pressing
  13. Once the meat is evenly attached to the skewer for full kebab length, press the meat at both ends of kebab to seal it onto the skewer
  14. Repeat the process and make 8-10 kebabs as per the meat balls
  15. Take a flat skillet and add 2-3 tsp of vegetable oil and heat it on low flame
  16. Place 3-4 skewers on the skillet and cook them on medium to low flame
  17. Turn sides to cook it properly from both sides
  18. Cook until brownish golden color (Do not over cook, keep them juicy)
  19. Take a lebanese bread and heat it a little bit by placing on skillet for 30 secs
  20. Take some salad prepared earlier and spread it on the lebanese bread int the center line of round bread
  21. Place two kebabs on the salad
  22. Add some sauce (Homemade or store bought) if desired and wrap the bread
